Asian Style Chicken Meatballs are sticky, sweet and healthy. This is a great appetizer for game day or a fancy party. Eat them as a Meatball lettuce wrap and you have a full dinner. It also so versatile, you can serve them on skewers, or in lettuce leaves or just keep them warm in a crockpot/slow cooker and let everyone spoon them out. However you decide to serve them, I promise they will be a gigantic hit!

Ingredients

Sauce

  • 1 tbsp. ground ginger

  • 2 tbsp. sweet Asian chili sauce (optional)

  • 4 tbsp. rice wine vinegar

  • 4 tbsp. low sodium soy sauce

  • 1/4 cup brown sugar

  • 7 1/3 oz. store-bought Hoisin sauce

Chicken Meatballs

  • sesame seeds

  • 3 tbsp. parsley chopped fine

  • 3 tbsp. green onion chopped

  • 1 tbsp. fish sauce (optional)

  • 1 tsp. sesame oil

  • 3 tbsp. low sodium soy sauce

  • 1 tbsp. freshly grated ginger

  • 2 eggs

  • 1 cup panko breadcrumbs

  • 1 pound ground chicken

Method

    Preheat oven to 450 degrees F.

    Place all of the meatball ingredients into a bowl and stir until fully mixed.

    Use a small cookie scoop and make mini meatballs (you should get about 15 on one cookie sheet).

    Bake for 15 minutes. Remove from oven and cool.

    Stir all sauce ingredients together in a stove top pan and heat until boiling. Turn down to a simmer and cook for about 5 minutes.

    Pour sauce over meatballs and garnish with sesame seeds and sliced green onions.
